In 2024, Miriam founded D stands for, Austria’s first specialty decaf roastery. The idea grew out of her own experience: during pregnancy and breastfeeding, she wanted to keep her coffee ritual without caffeine, but found decaf neglected and treated as second best.
Instead of accepting that, she set out to change it. With D stands for, Miriam created a roastery dedicated entirely to decaf – showing it can be rich in taste, full of variety, and crafted with the same care as any specialty coffee. Her focus is on premium beans, fairly and transparently sourced, naturally decaffeinated, and roasted fresh in Vienna in small CO₂-neutral batches.
Just weeks after launch, D stands for joined James Hoffmann’s global Decaf Project, a tasting event with over 50,000 participants. Alongside this, Miriam is building a community around decaf through tastings, pop-ups, and cuppings in collaboration with partner cafés – proving that coffee without caffeine can still be full of energy, character, and connection.
